Holy Carnitas

You need to make this. As soon as possible.

You take one of these:

Bone-in Pork Roast

Then you add a bunch of stuff, let it get happy for several hours, shred it up and you get this:

Wrapped in a tortilla with some pico and a squeeze of lime…have mercy.

Both boys nearly ate their weight in it last night. My husband made me promise to hide the leftovers and tell the boys it was all gone. Then there was a conversation about how the loss of this recipe would result in immediate marital discord.

Spice rub for pork roast

I don’t think he was kidding. Really.

You might want to make these.

Carnitas

1 TB packed brown sugar

1 teas. garlic powder

1 teas. onion powder

1 teas. dried oregano leaves

1 TB beef base (or 2 cubes)

Fresh ground pepper/salt

4 pounds pork roast

1/2 cup water

1 orange, juiced

1 lime, juiced

2 TB soy sauce

2 TB chopped fresh cilantro

In a small bowl combine sugar, garlic/onion powder, oregano, beef base, salt and pepper. Set aside.

Brown pork on all sides in a dutch oven over medium-high heat. Reduce heat and cover pork with spice rub.

Add water, orange/lime juice, soy sauce and cilantro. Heat to boiling, reduce heat, cover and simmer for about 4 hours. Roast should be falling apart.

Discard fat, shred pork using two forks and allow it to soak up the juices. Serve on tortillas…or make sandwiches…or just pile some in the middle of your driveway and enjoy – it doesn’t matter!

    Can’t wait to try this one out. My mother-in-law makes a similar dish called Tijuana Train Wreck (not sure how the name fits the dish, but it sounds exciting). Anyway, Seth loves anything shredded and in a taco, so I am sure this will be a hit.

    Had a great time seeing you on Sunday. We’d like to request you and your husband’s presence at all family gatherings. Makes for great conversation.

      Tijuana Train Wreck? That sounds fun! Let me know if this meets with Seth’s approval when you make it.

      And yes, Sunday was great – we said the same thing about you guys!! Maybe we should figure out somewhere to leave the kids one night and go out for dinner??
